Whipped Egg Cream

Almond milk 300 ml

Eggs 2 pcs

Thyme 6 sprigs

Salt to taste

Soy cream 2 tbsp

Garlic 1 clove

Miso paste 1 tsp

1. Add thyme, garlic, miso paste, soy cream, salt, and simmer slowly for 10 minutes in a saucepan. Strain through a sieve and let it cool.

2. Add eggs to the cooled mixture and whisk thoroughly.

3. Pour into heat-resistant dishes, creating the desired thickness of the layer. Cover with plastic wrap and steam in the oven at 95 degrees Celsius for 25 minutes.

Lacquered Soy Honey Salmon

Soy sauce 100 ml

Honey 100 ml

White wine vinegar

or Ponzu sauce 2 tbsp

Salmon fillet 200 g
